Odd to see the salt added to the water, my grandma always told me to salt chickpeas after cooking to avoid them staying hard. The dish I love the most is very similar btw, but less creamy and more "soup-like" from Lucania (even though my grandma still uses ditalini in it)

I would recommend against using any broth because you will be making your own with the celery, onions, carrots, and garlic. I had some sprigs of fresh thyme so I added a sprig along with a sprig of rosemary. Be careful of the amounts of beans and pasta or you'll end up like me and make enough to feed a family of four for two or three days. Not bad if you are part of a family of four but if you're by yourself like I am you're going to be eating it for a week. But it is so good I don't know if it will be burden, it just won't help me lose weight.

My nona would make this for dinner all the time. I miss it so much. Of course I know how to make it my self. But it obviously doesn’t taste the same as when she made it.

Send my husband to the store, soaked the chick peas. Spend 1.5 hours of my life for a terrible texture and went to bed with no dinner. Use can if you have to have this soup. My advise is to pass.
Pasta and beans is a staple for us Italians that do really brutal physical work and need something quick. I like to fry the beans with a medium olive oil, garlic and bay leaves. When available, a bit of home-made Italian sausage as well.
Poor over ditalini pasta, some grated pecorino and hammer down.
Left over and cold, those bay leaves leave an even more intense flavor in the left-overs

Here in Salento, Italy, we make a different pasta with chickpeas.
It's called "ciceri e tria" and is made of fresh semolino maltagliati pasta, half boiled in chickpeas soup and half fried then you put all together in the end.
