High-Protein Belgian Waffles

  1. **INGREDIENTS:**

    90 grams protein powder, unflavored

    3 eggs

    45 grams melted butter

    1-2 decilitre carbonated water

    1/2-1 decilitre powdered sweetener (if you want sweet waffles)

    1 teaspoon Mexican vanilla extract (or 2 tsp regular)

    3/4 teaspoon baking powder

    3/4 teaspoon salt

    1/2 teaspoon xanthan gum (optional)

    1/2 tablespoon psyllium powder (optional)

    **Recipe:**

    Pretty simple, mix all the ingredients together, rest for ten minutes or so, if the batter seems too thick just add more carbonated water (almond milk would probably also work but where I’m from, carbonated water/soda is what we use for batter). Grease the waffle iron and heat it up. Should take 3-4 minutes to cook. This makes 4 large Belgian waffles – in fact it could probably make 5 if you want to make them in batches. I had some batter left over from this.

    I served these with jam and whipped cream, but honestly in retrospect they would have been at least as good with bacon/syrup as they were more savory than sweet. I only used half a decilitre of powdered sweetener so if you want them sweet, I’d double that.

    **Nutrition:** 230 calories and 1.5 carbs per waffle. Macros would be about 39 % protein, 58.5 % fat and 2.5 % carbs This is just for the waffles, total calories depend on what toppings you add.
