On the tray- they don’t spread so honestly I could have fit way more on here

    In food processor: 2c oats, 1 banana, 1/3c peanut butter, 1/4 cup maple syrup, 2 tbsp chia seeds, 1/4 cup nut of choice (I used walnuts), I scoop protein powder, splash vanilla, pinch salt, shake of cinnamon. Mix. Add water 1 tbsp at a time to get to dough consistency. Use a little cookie scoop to scoop 24 balls out. Smush them down- they won’t spread in the oven. Bake at 325 for 13-15 minutes, 13 if you want them softer in the middle, 15 if you want them more done.

    Each one is 76 calories and about 3 grams of protein. To cut calories, omit the walnuts, chia seeds, protein powder, use PB Fit instead of peanut butter, whatever you want. Use sugar free sweetener instead of maple syrup. It’s whatever. These things are basically foolproof.

    These are not low calorie cookies. They are not high protein cookies. They are just cookies made out of oats and other foods that don’t spike my diabetic blood sugar. I am 3 weeks from my marathon and hungry all the time with the desire to snack. Hopefully these will last me the week!

    I hope you like them! I was thinking about melting some sugar free chocolate chips and doing a drizzle on some of them.

    Thanks for this! I’ve been making protein balls for my insatiable rungry teens and wanted to try something different. This fits the bill. Lots of the same ingredients too!
