Best curry I’ve ever had. Modified the 2 serving recipe a little bit from some stuff i had on hand. Makes 4 servings.

1cup basmati rice
1 red bell pepper
20oz chicken breast cut into slices
3oz basil oregano tomato paste
2tbsp Curry Powder
2tsp Paprika
1tsp Chili Flakes
1 coconut milk carton (included)
3tbsp ̶S̶o̶u̶r̶ ̶c̶r̶e̶a̶m̶ 0% fat free greek yogurt
2 scallions
2tbsp Garam Masala
2tbsp Cumin

Used my homemade vegetable & bone stock in place of all water in the recipe, including cooking the basmati rice.
