Ingredients For Turkish Kofte with Eggplant Base & Tomato Sauce: (4 serving)
For the puree base:
3 big eggplants
2 tbsp butter
2-3 tbsp olive oil
2 little bit heaped 🙂 tbsp flour
about 3/4 cup whole milk
salt
about 1/3 cup grated mozzarella or kashar cheese
For the Kofte
350-400 gr. ground beef
1 medium-size onion
2 slices of old bread
less than a tsp salt
1/2 tsp each ground black pepper, cumin, ground hot red pepper
1/4 tsp baking soda
4-5 drops of lemon juice
For the Tomato sauce:
3-4 tbsp olive oil
1 tbsp tomato paste, 1/2 tbsp red pepper paste
2 cloves garlic
1 tomato, 1/4 cup hot water if needed
more grated cheese on top
