  1. I DETEST baking, but had lots of pumpkin. So, I decided to make pumpkin bread. Hating baking as I do, I sought out the simplest recipe I could find. I came across this one and opted to use it. The result shocked even me. I usually tweak my recipes and this one was no different, but as a blueprint it was stellar. I didn't do loaves, instead I made them as muffins and had more left over for a sheet pan (oh, btw, I halved full the recipe). I also whipped the eggs to make it lighter, and added raisins and cloves. I didn't use puree, instead I grated my pumpkin and pureed one cup in half cup of the oil while adding the remainder as it was i.e. grated. It camr out light, golden, and moist My family enjoyed it so much that I made it two days in a row, even though I had lots left over from yesterday (my mother froze the muffins knowing i was unlikely to make again in a hurry…lol…hope they last frozen). So, thank you Allrecipies! Very handy and simple recipe. 💜

  2. Instead of all that spraying and dusting of the pans….why not just use parchment paper? Leave edges over two sides, and you can easily lift out the loaves. Just a suggestion.

Beat 6 eggs, mix 3 cups of pumpkin purée, 11/2 cupsof veg oil 4 cupsof sugar, All , one and half teaspoon, of baking soda, baking soda, salt, ground cinamon, nutmeg, cloves powdered, mix it with 4 3/4 cupsof all purpose flour, add these to the wet mixture, divide in the pans and bake it for 45 mts to one hour hour. Let it cool for 15 mts, serve with cream cheese on top, or add cranberries or nuts of your choice.( preheat to 350 degrees or 170 c )

  8. If you weigh the empty bowl before you begin, then again once the ingredients have been added. Take that weight divide by 3, ie 3 loaves. You get the exact weight for each loaf.

  10. Does anyone know how many mini Loaves this recipe makes? I’m not a baker but would love to try my hand at this. I have to make 15 mini loaves for Christmas as gifts! Help! This looks delicious!
