I'VE BEEN LOOKING EVERYWHERE FOR YOU!!!! =) Came across some of your great videos months ago. I tried looking you up later but forgot your name (and how to use the favourite button appearantly). Thank goodness I just happened to be looking up tagines. I'm terrible at cooking lamb. It seems like no matter how long I try to cook/steam it, it always comes out tough and chewy. What am I doing wrong? Also, what does one look for in a decent tagine? They are quite expensive in my neck of the woods.
@VilliageClown Lamb can takes up to 2 hours to become tender, depending upon the cut. My suggestion would be to look for a stovetop tagine (not oven) made from clay. If it makes claims about being easy to clean it's a bonus! Try eBay.

I just got a Terracota pot with lead as a gift. Can I cook the tagine in it? I also have a a tagine but I am not sure if I can put it on stove top or just use it to serve. It is made in Tunisia and I bought it from USA. Any suggestion?
Thanks so much. I saw in the Youtube that I have to season the Tagine cooking pot whether it is glazed or non-glazed and mine is glazed. A little confused about how to clean it after cooking because the video mentioned that after cooking, the tagine should be cleaned with vinegar not detergent. Do you know anything regarding this?
I Always tought your recipes are authentic but you made tagine with couscous i start to doubt. Tagine is eaten with bread.
Can I use chicken stock? Your recipe didn't call for saffron at the beginning but you added it. So a big pinch of saffron is like a teaspoon?
