this looks so warming yummy cozy! i have most everything on hand except sweet potatoes, but i do have a butternut squash. could that work maybe? i know they have different textures but the flavor is similar enough that maybe it wouldn't stray too far from the original 🤔

Made this today with black beans and it was great!
I tried this recipe as a clean-your-pantry dish, however i made some changes. I did a mix of split peas and lentils which I was kinda scared about at first lol! I added some of my almost wilted celery and carrots, and used chicken broth instead of vegetable. Also added some leftover ham and it tasted amazing.
This dish looks delicious.
However, when you said minimalist I thought of small amount of ingredients. Lol
