Learn how to make shrimp fried rice at home just like you get at a take-out joint or restaurant! This is quick, easy, and you can customize it to your taste. And if you don’t like shrimp, this recipe works just as well using chicken, pork, beef or vegetarian.
What you’ll need:
1 Tbsp peanut or vegetable oil
1/2 tsp sesame oil
1 large egg
1/3 cup frozen peas and carrots
2 Tbsp chopped onion
1/2 pound 41-50 shrimp, peeled, deveined and thawed
3 cups cooked rice (1 cup uncooked, cooked as seen here: https://youtu.be/-TaeYSiIbbw )
1/2 tsp salt
1/4 tsp sugar
1 Tbsp lite soy sauce
1/2 tsp mushroom flavored DARK soy sauce

If you can't find the Mushroom flavored soy sauce, I found you can substitute Vegetarian Oyster sauce (made with Mushrooms) or Knorr Mushroom flavored seasoning (again, a little hard to find outside Asian Markets, but worth the search). Both work great.

Made this recipe last night. It was soo good! You are absolutely right you need to use cold rice
excuse me. Dark soy sauce doesn't have tons of flavor. it's for color purposes only. usually for braised meat. it's not even for fried rice bec the light soy sauce is more than enough to achieve the color intended.
I don't know if you edited out some of the original video, but with the amount of time shown on the cooking of the rice itself, and given that the rice was cold when you put it into the pan, I'd say that the rice could not have been very hot at the end. I dehydrate my rice in an air fryer first to remove the excess moisture and then by the time the rice is dumped onto the pan, it was already hot and much of the moisture removed. The goal is to have fried rice, not mushy rice, and the hotter the pan, the better.

This may be weird , but I was wondering how minute rice that comes in microwaveable cups would turn out? I love the jasmine minute rice flavor. After microwaving I was thinking putting it fridge over nite , what do you think?
