So when this was on sale I grabbed a few. Expires 12/23. I don’t think we will use all by expiration, can I pressure can the jugs I have that haven’t been opened yet?

I’m not sure about your canning question but I do know that ghee can be safely consumed for a long time, maybe 1 or 2 years, past the “expiration date.”
When ghee becomes rancid you will smell the sour or see the mould.
ETA: it can also sometimes become discoloured as a sign of spoilage.
It’s a dairy product so don’t can it. But you can freeze it
Bella14LV
Freeze it.

Ghee is shelf stable and does not require refrigeration.

It’s already canned why would you re-can it? Shelf stable for many years until you open it been at three or four months .
PotajeDeGarbanzos
Freeze the extra maybe in smaller batches.

So Ghee is made specifically for the purpose of preserving it, by removing water and milk solids, etc. from it. So this is essentially just fat (or at least it’s supposed to be).
It is a shelf-stable product. If you detect no contamination, and it still smells nice, it is safe to use despite what the expiration says. It will smell off it it is starting to go rancid, at which point while it is still safe to consume it won’t be very nice to do so.
If you see any indication of mold growth or anything like that though, straight to the garbage.
