Salmon Skewers with Herb Marinade
Ingredients
Salmon
1. 2 lbs. Salmon – cut into 1 1/2” cubes
2. 2 TBSP EVOO
3. ½ tsp Cumin – ground
4. 2 tsp lemon Zest
5. Salt and pepper to taste
Chermoula
1. ½ tsp Coriander- ground
2. 3 tsp Cumin- ground
3. 2 tsp Paprika
4. Pinch of Cayenne pepper
5. 4 Garlic- crushed
6. 3 TBSP Parsley – chopped
7. 3 TBSP Coriander leaves – chopped
8. 1/3 cup Lemon Juice
9. 4 Fl Oz EVOO
10. Salt and pepper to taste
Method
1. Soak eight Bamboo skewers in water for 2 hrs.
2. Combines the EVOO, cumin, and lemon zest and toss to coat, cover and marinate in the refrigerator for 30 minutes
3. To make the Chermoula, put the coriander, cumin, paprika, and Cayenne in a small frying pan and cook over medium heat until fragrant and set aside
4. Put the Chicken on the skewers. Grill and cook the skewers till cooked. Serve with the chermoula drizzled over the chicken
