Pumpkin Sausage Curry soup

    This is one of my favorite soups, even before keto, and I was so happy that it is keto friendly!

    PUMPKIN SAUSAGE CURRY SOUP

    1 small can pumpkin puree (1.5 cups)

    1 lb pork sausage (can use vegan or turkey)

    1/2 med onion, chopped

    1 tbs garlic, chopped

    1-2 Tbs curry powder, or a mixture of tumeric and cumin

    32 oz chicken stock

    1 package frozen cauliflower

    Salt and pepper to taste

    Sautee the sausage and onion together until the sausage is browned and the onion is cooked. Add the garlic, stir for another minute. Then add the curry powder, stir together for another minute. Then add the stock and the cauliflower as well as the pumpkin, simmer for at least 20 minutes. Then salt and pepper to taste. If you want to reduce calories, use turkey sausage or half the sausage. To reduce carbs, you can add more stock and serve in 6 servings. One serving split four ways is actually a pretty filling meal.
