  6. You know it is a great appetizer when it is continually coming out of the kitchen in flames. This stuff is great, if a bit salty.

  7. A Greek restaurant I visited a few times (in Airdrie, AB) made such amazing food and in huge portions. They were endless plates of Saganaki coming out of the kitchen with a lovely blue flame for all to see.

  8. Well Chef John, I burned down my mother-in-laws house… To console my wife I went out and bought a slab of Kasseri and made her this Saganaki the very next day. I think she was still sad about her childhood home, but she cried tears of joy as soon as I excitedly screamed OPA! I let her have the last bite, and I think she's finally thawing.

  9. Me and saganaki go way back. My family and I would dine on special occasions at a wonderful little Greek restaurant on the south end of Indianapolis (now closed) when I was a little kid. There was a belly dancer and all! I vividly remember us being served this wonderful flaming cheese and loving not just the spectacle but the rich and unique flavors!
    Looking back, I’m so glad my parents took us out to try Greek foods. I’ve loved saganaki ever since, and have had equally delightful dining experiences involving this dish at other restaurants compared to my first.
