Minty Green Peas – This is a twist on the classic Hungarian staple, green pea “főzelék”. Usually these cheap, healthy and filling dishes are served as weekday lunches. Originally they contain minimal to no spices in it, but I decided to add a few things. Recipe in the comments!

    Ingredients:

    ⦁ 1000 g (4 cups) frozen green peas

    ⦁ 1 tbsp olive oil

    ⦁ 1 yellow onion, diced

    ⦁ 3 cloves garlic, diced

    ⦁ 600 ml (2,5 cups) broth

    ⦁ 150 ml (0,5 cup) full-fat coconut cream

    ⦁ 1 thumb-sized piece of ginger, grated

    ⦁ 1 tsp chili flakes

    ⦁ 1 tsp corn or potatoe starch
    Few twigs of fresh mint

    1. Turn on the Instant Pot and select the “Sauté” function. Add the olive oil and let it heat up. Once the oil is hot, add the diced onion and garlic. Sauté for about 2-3 minutes until they become translucent and fragrant.

    2. Stir in the grated ginger and chili flakes. Sauté for another minute to release their flavors.

    3. Add the frozen green peas to the Instant Pot and stir them with the sautéed ingredients for a minute. Pour in the broth and add the mint twigs.

    4. Cook on high pressure for 2 minutes. After the cooking cycle is complete, do a quick pressure release by carefully turning the vent to release the steam. Remove the mint twigs.

    5. Mix the coconut cream with the starch, and let the mixture simmer on the “Sauté” function for another 2-3 minutes to thicken the stew slightly.

    6. Take out half of the pot´s content and blend it well. Pour it back in the pot.

    7. Serve the finished meal with vegan patties, meatballs or sunnyside eggs. Garnish with chili flakes and fresh mint leaves. Enjoy!
