you forgot the Tomatoe sauce
What is the more expensive olive oil that you use? Can I get it on Amazon? I currently use Mythology Greek EVOO as my everyday EVOO.

Looks great Demetra! I make it without garlic or dill but I add a can of tomato sauce and It's also delicious!
There’s a reason vegetarian dishes have such an important place in Greek cuisine. It was in Kalymnos that I first saw a Greek Orthodox calendar, which indicates “vegetarian” days & “fish” days …etc. It was fascinating because until I saw the calendar, I thought that Lent was the only time of the year with dietary restrictions.
I have just done it as a side dish served with chicken in fresh cream and mushrooms and grec salad. Instead of dill I put oregano cz I don't like dill. Thanks a lot for your dishes. Am not grec but I love your food ,

Extra virgin oil should be cold-pressed (less than 0.02% in Acidity) otherwise it's not a good oil

Can you replace the fresh spinach with frozen spinach and account for the extra water? Fresh spinach in clamshells and bags always go bad quickly for me.
I'm Pakistani by birth and my mom makes the spinach very similarly minus dill and red onion. And she cooks it with butter and does add little milk with cumin. The yummiest recipe. I am wondering if this is a Greek dish, how did it get to all the way Pakistan. We were colonized (aka oppressed) by the British but am curious how it got transmitted. Regardless, I love it and cook it often, too.
I've got a idea with this dish to make spetzofi. As well as using mushrooms, and sundried olives/ tomatoes.

Thank you for the recipe! My mom always cooks spinach with rice and couple cloves of garlic, but with less rice.
