Id suggest playing with the amount of ancho/ chipotle to get spice lower if you’re sensitive.. and to add extra spice.
I add to this:
1 tbsp of chili powder
Tsp garlic p
Tsp onion p
Tsp paprika
I don’t grill it, just serve like that. Everyone who eats this recipe loses their mind. Freezers really well.

Also I substitute the short ribs for bottom blade roast/ chuck. I’ll use around 2.2-2.4kg for the recipe, so around 4.5 to 5 lbs.
