Loving this grill. Did wings today on it for the first time. Dry brined with salt for few hours and then used some sprinkled on garlic parmesan rub and once on the grill sprayed on duck fat a few times. Cooked indirect with grill ~400-425F. Turned out terrific. Next will experiment with things such as corn starch vs baking powder. With this coarse of a rub and the spray duck fat I think they were crispy enough.
