First soup of the season! Woke up to it being 46F this morning and the soup craving hit. I wanted something simple, but also wanted to try something new. Flipped through an InstantPot cookbook and found a very similar recipe. But I wanted to use my slow cooker and fresh veg vs the frozen they called for.
This popped up and the low number of ingredients sold it!
If you’re not a huge fan of ginger but realize it has its purpose, like I do. Cut it to 1/2Tbsp and it still gives it the flavor without overpowering.
Snow peas on top (not pictured) as a last minute add on let them keep a bit of crunch. And half a box of angel hair pasta finished it off to perfection.
It’s quite filling and you almost need a fork instead of a spoon. But would definitely make it again!
Last two pics are showing the perfect thickness of mushroom by using an egg slicer.

That’s a good looking soup! If you’re going to reheat you may want to make the noodles on the side, they will disintegrate otherwise.
