I’m used to working with pretentius ingredients and fancy meats but this still blows my mind everytime
30kg (66,14lbs) kagoshima a5 wagyu, worth around €16000 ($17000).

First glance at the thumbnail I thought that has to be worth at LEAST $12k+
Absolutely beautiful. I would love to work with that much wagyu.

Used to work at a whole animal butcher shop that only did wagyu. Mostly cross bred but when we would get the A5 Miyazaki BMS12 in. I had to buy some. I did put a piece on a cheesy gordita crunch from Taco Bell and it was good.

The picture reminds me of the time my friend told me about prepping an entire pan of fois gras for a catering gig. New guy needed some counter space so he put it on top of the salamander to get it out of the way!

I can’t afford a single piece of that- but my great grandfather owned land and would raise a single steer for three years, then butcher and split the meat amongst the family- that animal was treated well and taught us the value of our meal. So i kind of get it
