Saute 6 minutes in neutral oil at medium heat half a chopped onion, one chopped bell pepper, the chopped whites of a 1/2 bunch of scallions, and 10 or so chopped chives.

Add in your low carb rice – I used the Hearts of Palm Rice from Trader Joe’s. Cook for 5 minutes, stirring often, trying to dry everything out.

Add in a half cup of chopped leftover meat (we used smoked porchetta). Cook, stirring often, for 3 minutes.

Add in your sauce – mine was a couple TB of good quality soy sauce, 1 TB of fish sauce, and 1.5 ts of Chinese Five Spice. Stir and cool 1 minute. Take off heat and top with the remaining chopped greens of your scallion.
