I appreciate that the rationale for each step is given – and it's not some unscientific reason such as: tradition, "authenticity", or it's the chef's preference.

I've grilled shrimp plenty of times. I never had any issues browning them and they were not overcooked. I love the science behind food, but all these steps for grilled shrimp is just absurd. Clean em, pat them dry, season, coat with oil, cook on a really high heat, and remove em before they overcook. Clean and simple.
Excellent recipe leading to a successful and very tasty result — just as good as, if not better than, a classic shrimp scampi. I recommend the recipe, and will make it again.
The sugar caramelizes on the surface of shrimp. The "brown" color you'll see is actually the sugar. As for taste of sweetness, umm…."don't worry, it won't taste sweet."????? It's sugar. It WILL taste sweet. Also, sugar should be a last resort ingredient for food, especially proteins, or seafood, because sugar is not good for your health. Put a little olive oil on your shrimp. That will help brown it.
Psa, using a wire brush isn't safe becuase the bristles can fall off and wind up in your food, ending you up in the hospital, here's a quick 1 minute 50 second explainer video. https://youtu.be/U7QZdZBUGvI i recomend wadded up alminum foil as the best alternative.
My goodness! The amount of negative comments in this thread are unbelievable. They look like qanon descendants 🤣 I find this useful, will be using this method today. Thank you 😊

What sauce is used in this video?
What's the point of making a hot side on your grill if that's all you use?

Step 1, soak skewers for at least 20 min so they don't burn while grilling.
Do you keep the sugar on. I do not like the smell of seafood. What should I clean it with to take that smell out. ?
why would you want to brown shrimp? – strange to me

Made ‘em as directed. Truly the best grilled shrimp I’ve ever eaten. An opinion that was shared by 100% of those that partook.
Why remove the shell and miss that great chard flavour?.
