


Used an old convEggter and cut a half moon shape out of it, so to feed in more lump and wood chunks. Smokestack increases draw inside the curve chamber similar to an offset smoker. With the increased draft, there’s more convection resulting in a product, similar to what you would get from an offset. Got this idea from Aaron Franklin’s new barbecue, and smoking book.
