InterStellar BBQ is known as one of the best in Austin for a reason. Their meats are delicious. We ordered kielbasa, pork belly in peach tea glaze sauce, brisket, a side of cole slaw, a side of potato salad, and banana pudding.
The kielbasa was as good as advertised. They promote that it’s a polish recipe and it had a unique taste that an original polish kielbasa would have. The pork belly was our favorite meat, and the sauce was amazing. It gives a lot of flavor to pork. We didn’t care so much for the brisket taco compared to the other meats/sides as it was a bit dry for my taste. The sides were delicious – especially the potato salad, which we were served a generous portion.
And of course, how to eat BBQ without a delicious banana pudding for dessert? We liked it but it wasn’t my favorite banana pudding in Austin.

    Hard agree. I always try to tell people about Interstellar and get blank stares because the name doesn’t start with Terry or Franklin or Salt.

  5. Yep, definitely my pick for best in Austin too. Probably best I’ve ever had, tbh. Their brisket is on par with all the best restaurants, their peach tea pork belly is so unique and delicious, their sides just blow everyone out of the water. The single best thing I had there though was one of their rotating specials. If you ever see the lamb taco available on the menu, get it! I don’t know how often they get lamb, but damn I still think about that taco

    I just Google mapped it as I live in South Austin. 34 minutes to get to Interstellar, 31 minutes to get to Barb’s BQ in Lockhart. I believe you but I know I love Barb’s BQ and think they have the best variety of sides and meat, so as a creature of habit, I’ll go south.

    Looks decent enough tho!

    You had to go there. This looks like a vegetarian platter to me. No straight brisket, no bleeping ribs and no chicken. Fukk the sides. The pork belly is a plus.

    It’s soo hard for me to find BBQ here that I actually like because when you’re from KCMO you come with some pretty strong opinions. Q39, Joe’s KC, Jack Stack – hell I’d even take something close to Smokehouse. But there’s not one place here so far that checks even half the boxes. I haven’t tried here… Maybe I should?

    Had Interstellar for the first time last week. Massively massively disappointed. So salty I almost threw up. Even my wife, who has a cast iron stomach, felt sick afterwards. Never once felt that way after Franklins, or even (blech) Black’s.

    Just went yesterday myself (for only the second time)! I still prefer Franklin, but this is really is some amazing BBQ. Got to try the scalloped potatoes & pork bellies for the first time. Some nice gentleman also gave me the rest of his jalapeño-cheddar sausage. That unsweet peach tea is fantastic. There was hardly a line around 12:30pm.

    This place is definitely over hyped. Brisket is okay, pork ribs were mehh, the peach tea glaze on the pork belly was just odd to me I would prefer a different sauce tbh.

    Overall, this place is another “not worth the wait” to me, 10/10 would rather just hike out to Louie Mueller or head to Lockhart.

  23. To say they’re one of the best and then say their brisket taco was dry is very conflicting statements. Nail the brisket or you’re dead in Texas.

    With that said… they’ll be fine. Could be just a bad batch

    The Kielbasa was truly a highlight, with its richly flavored Polish smoked sausage that made it hard to resist taking more than a few bites. Not only that, but Star Grill’s grilling skills are impressive, as their meats are tender and juicy with just the right amount of flavor

    I loved Interstellar. However I agree the star meat is pork belly not brisket

    Made a trip to Lockhart and hit Black’s
    Wife and I agreed
    C- BBQ. Just average and expensive

    Would love to try out other Lockhart BBQ joints

    But I live 1.5 hours away

    And as good as ANY BBQ gets
    I’m not paying $$$$ to wait in line just to get served for another 1.5 hours

    I know many have offered negative criticism of Stiles Switch BBQ
    But I like
    Good consistent quality
    No long waits maybe 20min
    Staff offered friendly prompt service
    Clean venue
    They have a daily special
    Wings on Sunday
    What’s not to like

    I live NW and Interstellar is not too far away. When figuring price into the equation it’s just not cracking my top 3. The pork belly is unique and excellent.

    my go-tos are Michlethwait, La Barbeque and Louie Mueller. Each has strengths and weaknessness that can be worked around but all have excellent brisket! Franklin I’ve only had as a larger takeout order to avoid the long wait – it’s great but not practical for me.

    Interstellar is not good. Their brisket sucks. The pork belly is great but you don’t go to bbq for pork belly. Go to Moreno’s BBQ instead.

    To me the peached tea pork belly and smoked scalloped potatoes are their signature items. The thing about Texas bbq is there is no place that does ‘every type of bbq and sides’ best. I do think Interstellar is pretty great but ‘best’ depends on what you like. For example Franklin makes the best brisket I’ve had, Valentina’s for a bbq taco, etc. So many great places have something great or unique to offer, the fun is attempting to try them all!
