So far, I’ve made 75 chocolate chip cookies, 14 muffins, I’m currently making brownies, and after the brownies are done, I’ll do sugar cookies. I have already found loving homes for the sweet goods so I don’t have to worry about that!

(Please don’t mind the kitchen, we’re doing renovations.)

    I must be having a moment.. you said “eggs expiring” and I was like, “Gosh that’s awful personal”… Then I saw the cookies.. ohhh those eggs. I should go back for a nap!

  4. Eggs are usually still good for a couple of weeks past the date printed on the carton, but I’m glad it gave you the excuse to do a baking marathon!

    We eat so many eggs in my house that I don’t think that we’ve ever had any that have gotten ever close to expiring.

    Eggs are still good to bake with up to a month past the “exp date”. They’ll have a slightly off taste if you were to cook them up and eat them, but still safe. Baking wise they won’t have any affect on the taste though.

    There are other ways to use eggs. But not better ways. I’d have made an omelet or something. You’re doing the lords work, keep it up.

    Yummy looking cookies. Don’t let me stop you. But did you know you can freeze eggs in ice cube trays? Pop them into zip lock freezer bags once frozen. Defrost later for cooking & baking.

    Interesting info [here](https://www.fsis.usda.gov/food-safety/safe-food-handling-and-preparation/eggs/shell-eggs-farm-table#31) on egg handling and safety. Basically, if “expiration” or “sell by” is used, you likely have about two more weeks past that date before it would be past the “use by” threshold. The rule of thumb here seems to be 3-5 weeks in the fridge is a safe shelf life. If they’re not obviously rotten and you cook them through, you’re fine even if the flavor is no longe r optimal.
