
I seem to not bake as much in the summer, not sure why, but im happy with these! Poolish pre-ferment, 90/10 bread flour/ whole wheat flour, 65% hydration, 2% salt, 1% yeast, 1%olive oil. The crust has a very bran-forward flavor to it and I’m all about it, its really good. Looking forward to some great sandwiches this week!
