
Blueberry Pie Filling Question
I made the NCHFP Blueberry Pie Filling but researched and found the Wisconsin Extension said it IS safe to use 3/4th of Clear Jel Cook Type called for in the recipe. This recipe said it would make 1 quart of pie filling, although I came up with 2 inches of headspace. There is an additional 1 inch of headspace in the jar, is this safe? I followed the recipe exactly including processing time, with the exception of the extension’s experimentation of “3/4 of the amount of Clearjel stated in the recipe.” Thank you in advance!
