    Power bowls for 4 adults for 2 days. They consist of Brown rice, roasted sweet potato, broccoli and cauliflower, just roasted on a sheet pan with salt pepper and olive oil. Curried chickpeas with spinach and kale. I didn’t follow a recipe but browned some onion in oil, added curry powder, tumeric, garlic, and cumin. Added the chickpeas, cooked for about 5-10 mins then added the spinach and kale. Before serving or leaving the house I add some homemade hummus.

    Ingredients;
    Brown rice (about 2 cups dry)
    Head of cauliflower
    Head of broccoli
    2 medium sweet potatoes
    2 tins chickpeas

    Nice! I know that’s gonna hit so good in the middle of a workday. Do you normally eat it cold or heat it up?
