Ingredients
For the Potato Salad:

1 and 1/2 pounds (about 6) Russet Potatoes, peeled and cubed
1/2-3/4 cup mayonnaise
1/4 cup plain yogurt
2-3 tablespoons vinegar
salt and black pepper to taste
1 teaspoon dried dill or 1 tablespoon fresh dill
The Greek Salad:

1 head Romaine lettuce, washed and thinly sliced
1 English cucumber, peeled and diced
4 scallions, thinly sliced
1 bell pepper, sliced into thin rings
1/4 cup finely chopped parsley
15 grape tomatoes, halved
12 olives, pitted and halved
2-3 peperoncini peppers, sliced
3-4 ounces feta cheese, crumbled
1 teaspoon dried oregano
The Salad Dressing:

1/3 cup olive oil
1/4 cup vinegar
1/2 teaspoon salt
Instructions
Make the Potato Salad: Place the potatoes in a pot and cover them with cold water. Season with a teaspoon of salt and bring to a boil. Reduce the heat to medium and boil until the potatoes are fork tender. About 15 minutes. Drain the water and place the potatoes in a mixing bowl.

Season the potatoes with some salt and black pepper. Add the mayonnaise, yogurt, and vinegar and toss to coat. Add the dill and toss. Taste and adjust the seasoning if needed.

Chill the potato salad in the refrigerator. This can be done overnight or for an hour.

Make the Greek Salad: Combine all of the salad ingredients in a large bowl and add the dressing. Toss to coat.

Serve: Place the potato salad in a large serving bowl and top with the greek salad. Kali Orexi!

Notes
Optional: Add boiled eggs, anchovies, and more herbs to the salad if desired.

Make the potato salad the day before and store it in an airtight container in the refrigerator.

  1. Bravo Dimitra. Looks great but a little too runny if I were serving this. I grew up in Tarpon Springs and currently own a fine dining Taverna in Crystal River about 1.5 hrs north of TS. A little secret tip for those who may want to try my yiayia's recipe is to whisk olive oil and Greek dressing and not use mayo…and of course she added a little lemon, oregano and DILL to everything she made back in the day, Having potato salad is not something we as Greeks are/were used to eating – it's definitely a Tarpon Springs thing and they started this trend. but of course our customers expect us to have it also. We don't use Mayo πŸ™‚ In all honesty I've never seen mayo used in our village in the Peloponnese or in yiayia's village in Samos. Great Video, Thanks much -Despina

We drive down to The Tampa Bay Area every year and always spend at least one or two days in Tarpon Springs, visit the churches, St. Nicholas and Archangel Michael, go to all the souvenir shops, walk along the water, look at the boats and, of course, eat at one of all those fantastic Greek restaurants.   6. I had this salad last summer at a couple restaurants when I visited Tarpon Springs. I have been craving it ever since. Your version looks really yummy.

  7. Let me start by saying that you have a totally wrong idea about the major philosophy behind the Greek cuisine which translates to spreading wrong information about the Greek salad. When you say the more you put in there the better it gets its the worst lie of all, so please don't lie to your viewers. The philosophy of Greek cuisine is simple, not many ingredients but the best of each kind so you want to taste how good these ingredients are individually and you use good methods to combine them in flavour and texture matching. So yeah, you could just start by saying this is the salad that they do there, but not Greek.

  8. Great recipe! We live near Tarpon Springs and always thought potatoes in a Greek salad were strange….but it actually tastes good. If you ever visit the area, the Cretan house would love to have you as a guest!

  9. Tarpon Springs~!!! When I was a boy I lived in Tarpon Springs. There was a girl in 6th grade and I was gonzo for her. Greek, lovely, her parents ran the largest insurance agency in town. She never noticed me.

  12. I was in Tarpon Springs yesterday and had a salad and potato salad. I love the potato salad but I must put more red and green peppers in it. It was delicious we went to Dimitris in Tarpon Springs. I had to get on here and tell you that I need to learn how to make that potato salad.
