HOW it’s MADE:
Start by chopping a small bunch of fresh parsley and two scallions.
Squeeze the juice from a lemon.
Then, put the chopped parsley and scallions in the food processor.
Add 1/2 CUP of Cashews, 1/2 CUP of sunflower seeds, 1 tablespoon of nutritional yeast, 2 tablespoons of sunflower seeds oil, 2 pinches of salt, 100 ml of water and the lemon juice.
Blend well until you get the desired consistency.
Transfer your PESTO into a jar and store in the fridge. It can last for about 7 days.
