Freestyled this mushroom pasta for lunch today

  1. Shallot and garlic in oil then almost a whole container of baby Bella mushrooms. Tossed up in a glob of butter and let them cook down.

    Sauce was a lazy white sauce with butter, flour and milk + some pasta water and white wine vinegar

    Stirred in some spinach and Parmesan and seasoned with salt, pepper, red pepper, oregano, and parsley

    Turned out pretty good. If I could do it over again I would probably use more mushrooms and/or less pasta, the ratio of the two wasn’t ideal, but otherwise definitely a tasty quick lunch 😋
