I have had some success with gum paste roses in the past (as the picture shows) but this time, the client specifically requested marzipan, as in the real stuff made from mostly almonds (though I’m gonna buy it). The question is: if you make marzipan roses – or any other decorations for that matter – what tips can you share?

    If you can make a rose with gumpaste/fondant, you’ll be fine. Just chill it if it starts to get sticky while you work with it, and if you want to make them stiff, add some tylose powder.

    Marzipan can give you crazy thin petals and look very very natural, but one thing to consider is that it picks up fingerprints WAY easier than gum paste or fondant, so try and keep your contact with the visible portions to a minimum. The most frustrating part of working with it, to me at least, is that it is very sensitive to heat, as in if you keep a petal in your palm for too long while you shape it then it will sag and take too long to harden, meaning you need to just ball it up and start over. There’s definitely a learning curve.

    That said! You can make some very realistic and beautiful flowers with it, and if I remember right it tends to run cheaper than bulk gum paste and fondant? Good luck, and make sure to give yourself plenty of time to practice!
