First post in here but not my first rodeo on the slow cooker.
The start of the NFL season and nighttime lows under 70° means one thing: chili.
This is definitely the spiciest I’ve made it but I can’t stop. I’m on my third bowl of seconds.
(No beans in this here cowboy chili spin-off.)

**INGREDIENTS AND RECIPE**
**Ingredients**
3 lb of cheap red meat (this batch was 1.5 sirloin and 1.5 ground beef)
1 onion
1 T garlic (minced) or 2 cloves
2 cans mild Rotel (hot for added spice)
1 can beef broth
4 oz green chiles
1 can tomato sauce
1 beef bouillon cube
1 chicken bouillon cube
2 packs mild chili seasoning (hot for added spice)
7oz chipotle salsa
(7oz chipotles in adobo sauce for added spice – leave in longer for the most spice)
Dozen dashes of Louisiana hot sauce
1 full recipe of homemade chili mix (below)
**Homemade Chili Mix**
3 T chili powder
1 T Dano’s spicy
1/2 T Tony Chachere’s creole
1/2 T bbq spice
1 T ground cumin
1/2 T onion salt
1 t garlic salt
1 t paprika
1/2 t garlic powder
1/2 t onion powder
1/2 t red pepper flakes
1/2 t dark brown sugar
1/4 t cayenne pepper
1/4 t ground cinnamon
1/4 t chipotle powder
**Recipe**
Brown meat, drain excess juices, add to slow cooker
Brown onions, add to slow cooker
Add all remaining ingredients
Set slow cooker to low for 6-8 hours
Stir every 1-1.5 hours
