Ingredients
1/4 cup olive oil
5-6 scallions, thinly sliced
1 pound (about 500g) green peas, frozen or canned
38 oz (800g) canned artichokes, drained
1/4 cup finely chopped fresh dill
3-4 tablespoons fresh lemon juice
salt, to taste
freshly cracked black pepper
1/4 cup water, or more
Instructions
Add the scallions and olive oil to a pot and cook over medium heat until softe. About 3-5 minutes. Season with a pinch of salt.

Add the peas, dill, salt and pepper and cook over medium heat for 8-10 minutes util tender.

Add the artichoke hearts and season with salt and pepper. Add the water and lemon juice and warm through. Taste and adjust the seasoning if needed.

  10. I did not grow up with artichokes. When I was older they became popular un spinach dip but you can't really taste them. I ate them in a salad once and was hooked. I like them too but fresh they are EXPENSIVE! I get canned and taste good. I will definitely try this dish.

  12. Dimitra I do the same dish frozen peas and frozen llama’s with just the dill salt and pepper onions garlic and it’s delicious with my used of the lamb that’s my traditional dinner of course potatoes

    I just made your recipe as a side dish for my poached in parchment pesto chicken/mini potato/string bean. I didn’t have fresh dill or mint on hand so I used a small amount of my pesto to your recipe instead and it’s wonderful as well. But just a bit, I didn’t want to take away from the pea and artichoke flavour, basil can become dominant in anything if too much is used. Anyhow, thank you for this recipe, it’s amazing…I can’t wait to try it with fresh dill next time…Ukrainian background, so fresh dill is a staple in a lot of my dishes. Thank god my wifey loves dill as well😊

  15. Made this for dinner when you first posted. Then I made it again but added some left over avalemeno soup that I had in the fridge so as to use it up. OMG…. Absolutely delicious…the stew came out so creamy and lemony. Just a perfect combination with the artichokes and peas!!! Thank you for your wonderful videos. My husband and I eat so well because of your recipes!

  16. Fresh dill is the best fragrant herb. It adds enormous flavour to anything. My Mum used it in many recipes along with other herbs. Greeks love fresh herbs and dried oregano 💗🥰
