    Does Cowboy Candy spice level ever mellow out? I just canned mine (it isn’t in the picture yet, still cooling!), and it is SO spicy. Like instant heartburn. I want to love it but it hurts haha

  3. A lot depends on the jalapeno peppers – some are spicier than others. If you have a brave tester in the house, perhaps have them taste and tell you the level of spice? The ones that have corking are likely more spicy…I would definitely remove the seeds/membrane in those.

    First time I made cowboy candy, it was perfect. Second time it was way too spicy. I’ll have to find a use for it because I’m the only one who likes sweet pickles.

    The flavor does mellow out a little over time, I feel it’s best if you let it “age” for at least a month before eating. Also, for next time, you can use different (milder) peppers – my most recent batch was mild Hatch chiles and mini sweet peppers
