MOROCCAN RED LENTIL SOUP

– 3 tbsp. olive oil
– 2 cups of red lentils, washed and rinsed
– 1 onion, chopped
– 1-2 celery stalks, chopped
– 1 potato, chopped
– 1 ripe tomato, chopped
– 2-3 garlic cloves, chopped
– juice of 1/4 lemon

– 1 tsp ground coriander
– 1 tsp ground cumin
– 1 tsp ground turmeric
– 1/2 tsp paprika
– 1/4 tsp ground cinnamon
– salt and black pepper to taste

– fresh cilantro or parsley, to garnish.

Heat oil in a pot, add onion, half of garlic and fry for a minute. Add all spices. Add all chopped vegetables. If mixture will be dry, add a little bit of water. Keep stirring for couple minutes. Add washed red lentils. Add water (about 8 cups).
Bring to boil and remove forming foam. Keep boiling for 10 more minutes on medium heat. After 10 min check if potatoes and lentils are ready.
If ready, remove soup from heat, add lemon juice and other half of chopped garlic.

Serve with fresh chopped cilantro or parsley.
