Shopping List:
1.5-2 lbs XL Shrimp
3-4 tbsps butter
1 tbsp avocado oil
1/2 cup dry white wine
1 lemon (juice and zest)
1-2 cups pasta water
1/2 cup chopped parsley
1 shallot (diced)
4-5 cloves of garlic (minced)
1 lb fettuccinne
salt, pepper, garlic, onion powder, red pepper flakes, italian seasoning

Directions:
Begin by partially cooking your shrimp in a skillet with a bit of cooking oil over medium heat. (about 1 minute per side) Remove the shrimp with a slotted spoon and add in some butter and oil. Next, add in your shallot and garlic and cook for 2-3 minutes. Deglaze the skillet with dry white wine or chicken stock and bring to a boil. Reduce the heat to a simmer and cook off the alcohol for 3-4 minutes. Cook pasta to package instructions and strain (keeping 1-2 cups of salted pasta water). Add your noodles to the sauce and toss to coat. Add pasta water as needed. Season to taste and add back in your shrimp to finish cooking. Add chopped parsley, lemon juice, and lemon zest to taste. Garnish with parsley and red pepper flakes.

My wife said "If this was at a restaurant, I'd pay 30 bucks easily" ……………………… I added a pinch of sugar to tame the tartness from the lemon and then I had a winner! A sweeter wine would have done it too. Thank you, that dish is going in my rotation!

  2. Do not "heavy" salt your pasta water. The salt will over power the dish. All you will taste is salt. So taste as you add your seasonings. Lots of TV chefs will add too much salt because their taste buds are dead. lol

  4. Man, this sauce was SO flavorful! I’m a picky person who doesn’t branch out too much but I absolutely loved this dish. I wish I would’ve doubled the recipe because it was so delicious. I cooked the shrimp for my husband and added chicken for myself and the sauce paired beautifully with both! I paired it with some homemade cheddar bay biscuits. Definitely adding this to the list to make again and again. 🤌🏽

  5. Wish he thought about the name of the pasta dish. Shrimp scampi pasta literally means shrimp shrimp pasta. Scampi = shrimp.
