I don’t follow a strict recipe but approx. as follows:
7-8 small-medium beets, chopped & skinned
4 large potatoes, chopped & skinned
5 carrots, chopped & skinned
1 large onion, diced
1 can tomatoes, blended
“Family sized” pack of stew meat
1/2 stick of butter (optional but I like it when using leaner cuts of meat)
Beef broth to cover
Dried dill, garlic powder & onion powder to taste as I honestly don’t know how much I used. I used a loooooot & upped the seasoning probably 3 times while it cooked. Fresh is best, especially for the dill, but I had dried on hand.
Several generous glugs of red wine vinegar.
Salt to taste
*Normally would include cabbage but I forgot to grab some. Personally, I do prefer it with loads of cabbage & sometimes just do it anyways 🤭
*I sometimes put tomato paste, which is recommended if you want a thicker broth.
*tastes amazing subbed with veggie broth. Can use mushrooms in place of meat or just leave it out altogether.
Sour cream was added after I took the photo! Perfect on its own but I also enjoy bread & hardboiled eggs with it. I’m not Eastern European & have never eaten authentic borscht but I cook this up almost once a month.
