WHAT IS A TAGINE?
A tagine is a conical earthenware pot, and the dish prepared in the tagine pot shares the same name as it’s cooking vessel. It’s kind of funny how that worked out. Moroccans kept it simple; let’s just call everything to do with this pot a tagine.
Whole fish or Fish fillets poached in a sauce, an abundance of vegetables. This Moroccan Fish Tagine is the perfect topping for couscous and it is done in 30 minutes! Delicious and healthy doesn’t get any better!

INGREDIENTS
For the marination ( Chermoula)
3 tsp ground cumin
2 tsp paprika
1 cup chopped fresh cilantro
1 cup chopped fresh parsley
½ cup extra virgin olive oil
¼ cup freshly squeezed lemon juice
4 garlic cloves, chopped
½ tsp. salt
a pinch cayenne pepper or chilli flakes
For the Tagine
2 tablespoon olive oil
1 medium onion, sliced
1 medium carrot, sliced
1 bell pepper any colour
1/2 of preserved lemon
10 to 12 olives
2 teaspoon paprika if needed
1 tablespoon ground cumin if needed
½ teaspoon ground turmeric (optional)
¼ teaspoon chilli pepper/cayenne (optional)
1 tomato, skinned and diced (optional)
1 head of garlic, finely diced
600g whole fish or 4 cod fillet (or any firm white fish.)
salt (only if needed)
