
After reading about the pros of pressure canning tomatoes I decided to give it a shot this year. It does seem like they held up better as there seems to be less shrinkage.
Any advice on how to prevent mineral scale from building up on my All-American?

Congratulations, they look beautiful! Adding a splash of vinegar to the water in your canner can help prevent mineral scale buildup, as well as emptying and washing out the canner as soon as safely possible. If you have really hard water where you live, you might consider using filtered water… nothing horribly expensive; just a counter-top water filter pitcher of some kind for a bit softer water use in your pressure canner. Would you mind sharing a bit more about your process and which method of pressure canning (raw pack, hot pack, water, no added liquid, etc) you use? Are your tomatoes on the firmer side when you can them, or are they pretty soft? How long did you can them for? I am very impressed and you have given me something to aspire to! 🙂

I pressure can almost all my tomato sruffs cause the hold up better, and stay longer once opened.
