

I’m having issues when canning tomatoes where water seems to boil out of the jars (see before and after pics below. Details:
Roma tomatoes ~1/2” dice
1 quart small mouth jars
2tbsp lemon juice + boiling water to 1/2” below rim
Canned at 11 psi for 25min
All the jars seal but with water loss as you can see. Also, are there any tips for packing so the cans are more full post canning?
