I made this for my friends and it was a total hit..we loved it so much that we actually ran out of dip like 5 minutes in because we put loads of it on each bite haha. I didnt want to buy gruyere (unbelievably expensive here in the DR, much more than in the states) so I used pepper jack instead. loved this recipe, it's a keeper.
I made this to go with our thanksgiving hors d'oeuvre and it was the only thing where there were no leftovers. I can forsee I will be asked to bring this to every family gathering in the future.

However, when I went to the link above for the usual ingredients list, the search box didn't work … it just kept going back to the home page. Of course, I can write down the ingredients, but I'm missing the print list you usually provide. Whassup?

I made it with 1/2 cup of blue cheese instead of the parmesan, and I added like 2/3 cup of sour cream and used cayenne instead of hot sauce…tasted amazing, ate it with tortilla chips
Omg I made this and it was so disgusting! The gruyere cheese smells exactly like a dump. I have to dump construction materials at my local dump and the smell that came from the cheese was exactly what the dump smells like I wanted to puke
I now am constantly bugged to make my spinach artichoke dip because it is so amazing. Here are some tips that I found that make this dish even better and easier to make: Always use a food processor, even if you are making a huge batch use the food processor to chop up the spinach and artichokes. I find the taste and consistency is much better, and easier, this way. I have only used shredded mozzarella and shredded Parmesan in the dip itself and I put mozzarella on top. These two cheeses definitely suffice and you do not need multiple cheeses to make this dip great. Bringing in Gruyere would make it taste better but it isn't necessary if you don't feel like spending another $5 – $15 (depending on size). Last, make homemade tortilla chips whenever possible. Buy cheap corn tortillas (20 tortillas makes enough for around 6 people from my experience) from the store, cutting them, and frying them yourself. They taste better and cost half the price of store bought.
This is amazing !!!!! I did add a cup of sour cream otherwise it is too thick. I love cheese but had never tasted Gruyere before (it is expensive) but it was so delicious and gooey, I was in heaven. My whole family went crazy over this, and they are a hard group to please. Thanks you, thank you, thank you.
Oh how do u do it? Theres not one time I am disappointed after watching your videos !!!! I just watched a video that would have me in that kitchen for hours !!!! This is quick n more delicious looking than ever .. Ive only eaten this dip once in my life n i love it !!!! Im ready for football seaon to start. Ill be making my mans hot wings though. he likes them.lol. thx again Chef John. yer the best. Love the way u talk n explain this
Chef John, I just thought of something else important. I noticed u used two Ramekins n place in oven on 400 for the 25 min.What if I dont have Ramekins and just my big baking glass dish? Do I still cook it the same way becuz I dont want to end up under cooking it or over cooking it. thank u.
This was amazing as a dip, but do you think spreading the unbaked dip onto slices of bread, topping with a bit of cheese and baking them in the oven would be a good idea? You know, for when you're not having a party but feel like having some spinach artichoke goodness anyway.
I dropped the gruyere and mozzarella from the recipe and went with 8oz of pepperjack and 2oz of Parmesan instead – it still tasted fantastic. Possibly better, even.
Combine 14 oz can artichoke heart, 1/2 c spinach 1/2 c sour cream, 1/2 c mayonnaise, 8 oz cream cheese, 1 c parmesan cheese, 1 T mined garlic. Place in greased 8×8 pan/glass dish. Sprinkle 1/4 c parmesan cheese on top. Baker 350 degree F or 20 minutes. Serve over Italian Bread broil 5 minutes with butter spread (1 T oil, 1 c butter, 1/2 c cheese, 1 T garlic powder)
I think I might've inadvertently one-upped you on this one, by adding smoked turkey wings that I boiled down in a broth then added back to the dip, without the broth. Oh my God it was amazing!

I agree that mayo subtracts from the flavor! Makes it taste more "shelf stable" and less "fresh and homemade." I haven't tried sans-sour cream, but willing to give it a shot.
Chef John, We made your recipe today & you were so right! There was barely any left! lol. It was the best we've ever had. We've never made it before & this was so good we are making it again for Christmas. Thank you!
