Second time this year going out for elderberry. I already have 6gallons of juice and 4 flats or jams from last pick. Now I’ve got like 30 gallons again, any suggestions?

Ball Book of Preserving does have one for jelly. The same book also has one for elderberry and peach jam.

Tread carefully. Old recipes have been determined unsafe due to the variable and possibly high pH of some elderberry varieties. You want a recipe published (or updated) by an extension agency in the last few years. It will be very specific about fruit or juice to sugar ratio for safety because water activity is protective, not pH. I used the UWEX recipe and wasn’t super thrilled with it. If I get elderberries again, I’ll probably make a refrigerator recipe.
