For tomato-onion salsa
• 3 Roasted tomatoes or use fresh tomatoes
• 1 Onion
• 2 garlic cloves
• 1 green chili or jalapeno pepper
• 1 tbsp coriander leaves/cilantro
• Salt to taste
• 1 tsp lemon juice
To marinate the chicken
• 2 chicken breast, sliced
• 1 tsp Fajita seasoning (recipe in the description box)
• 1 tsp Lemon juice
To make sautéed onion and bell pepper
• 1 onion, sliced
• 1 yellow bell pepper, sliced
• 1 red bell pepper, sliced
• 1/2 tsp fajita seasoning
• 1 tsp lemon juice.
To cook beans
• 1 tsp garlic
• Saute for 30 seconds.
• 1 cup red kidney beans (cooked) or straight from the can (washed & drained).
• 1/2 tsp fajita seasoning
• Salt to taste
• 1 tsp lemon juice
• 1 tbsp coriander leaves/cilantro
To make lime-cilantro rice
• 2 cups cooked rice (medium/long grain)
• Salt to taste
• 1/2 tsp lemon juice
• 1 tsp black pepper powder
• 2 tbsp coriander leaves/cilantro
