  3. I use Ras Al Hanout, an Ethiopian spice, instead of cumin. The flavors are deeper, and cumin is in the spice mix. Add sparingly &. Taste as you go.

  4. I am moroccan and I cook the same recipe. I am very hsppy that Marrakesh museeum has dedicated a big part to Moroccan Jewish food that it was to my surprise a 100 % Moroccan Jewish food like seffa, fishballs, dates filled with nuts and a lot sweets and cakes. Very interesting to update my knowledge about Moroccan Jewish art culinary
