2nd year of canning went well! 208 jars on the shelves, 30 in the freezer, 40 in the fridge and more stuff dehydrated

    Summary:

    Currently have 208 jars on my shelves. The top shelf is general tomato products (salsa, BBQ sauce, catsup, sweet & sour sauce, tomato basil soup, bruschetta, corn salsa, V8 kind of soup base); next shelf is jams, pie fillings and pickled items; next shelf soups and broths; fourth shelf beans; and bottom shelf is all diced tomatoes.

    This doesn’t show the maybe 40 jars of pickled items in the fridge (kimchi, salsa, pepperoncinis, hot sauce, sauerkraut, radishes, green onions, and pickles) and the spaghetti sauce and pesto in the freezer.

    I also got a dehydrator to preserve peppers and squash and made tomato and onion powders.

    It was hard work and I preserved almost every day for 5 weeks. Maybe grow a little less next year though.

    Added: The bungee cords are because I live in California. The shelf is bolted to the wall and between those two things and the carpet, I am hoping my hard work would survive an earthquake.

    Beautiful!

    Think about securing you wire rack to studs, and I learned after a fairly big quake that the bungee cords I used on the sides and front did not prevent the jars from falling of the shelves.
    We now use thin metal rods secured with wire and I keep the jars in open topped cardboard boxes on the shelves.

    Remember earthquakes can happen anywhere on Earth.
