INGREDIENTS:
Quinoa – ¼ cup, uncooked
Water – ½ cup
Parsley Leaves – 2 bunches, about 1-1.5 cups chopped
Mint leaves chopped – ¼ cup
Tomato – 1 large, deseeded and chopped
Green Onion – ¼ cup, sliced thin
Olive Oil – 3 tbsp
Lemon Juice – 2 tbsp
Garlic – 2-3 cloves, finely chopped
Salt – as per taste
