Beef barbacoa – pork?

I’d planned on doing Kenji’s beef barbacoa (https://www.seriouseats.com/tender-beef-barbacoa-chipotle-tacos-recipe) for a dinner this weekend, but have just learned one of the guests is Hindu so can’t eat beef. I’ve done the sauce before and it’s fantastic, do you think this recipe would go ok with slow cooked pork shoulder?
