The reason I call this a redemption is because if you saw my post from last night, you know that I discovered I am not a huge fan of couscous. Could’ve just been the way I cooked it, but I wasn’t huge on the texture. Tonight’s dinner, however, was one that I knew I would absolutely love. One, because I’ve had it before and it is dee-licious, and two, because what’s not to love about this dish? I also added a little bit of truffle oil I have in my pantry, just for a little extra zing. I was very excited about this dish and for good reason, because I am very pleased with it. My taste buds were very happy while I ate this 😋😋
