Preparation

  1. In a large pressure cooker, combine all the ingredients except the parsley. Add enough water to just cover the meat, being careful that the total volume doesn’t exceed more that 2/3 of the pot.
  2. Following the manufacturer’s instructions for the pressure cooker, cover pan and cook for 45 minutes, or until fork-tender. Stir in the parsley and serve.
