Made my first peach jam. Is there a trick to getting fruit pieces to distribute evenly?

The fruit floats because there is still air trapped in the pieces. Smaller pieces, longer cook time, or grinding instead of chopping will help. Don’t overdo the cook time, though, because you can deactivate the pectin or overset the jam. Low and slow up to boiling.
